While the Cauliflower Rice is at the spotlight, broccoli is slowly making it to the top post ever since the quarantine has started. Surprised? Yes, aside from the cauliflower, we can also indulge into another low-carb treat, the Broccoli Rice. Like the cauliflower, it is a very healthy green vegetable too. Aside from being a great antioxidant, this veggie is considered as one of the best cancer-fighting agents.
Green veggies are also good in building our muscles. They also help in repairing torn muscles and even bulged discs. Two years ago, my MRI showed some bulged discs. Aside from medicines, physical therapy, and a stress-free lifestyle, I ate a lot of green veggies to help my muscles, joints and discs to recuperate fast.
How to make Broccoli Rice?
Simple as the cauli rice, this recipe only takes four simple steps to prepare: wash, remove the stems, grate/shred and saute.
You may also add some other veggies if you prefer, you can actually turn this simple rice recipe into a Yang Chow type by adding the same ingredients. Carrots, corn and ham of bacon bits, even hotdog bits will do.
Broccoli Rice
Ingredients:
- 500 grams broccoli
- 1 tablespoon olive oil
- 1 piece onion (finely chopped)
- 4 cloves garlic (minced)
Instructions:
- Wash broccoli thoroughly
- In a bowl, remove the stems and get all the florets.
- If you have a food processor or a blender , use it to easily chopped the broccoli florets, if none a regular grater/shredder will do.
- Heat a wok or apan, put a little olive oil
- Saute the onion and garlic (optional)
- Add the grated broccoli
- Season with pepper, salt and a pinch of sugar to taste.
- Serve hot with any meat or fish dishes. This is perfect with any fried, stewed or grilled dish.

BROCCOLI RICE
Equipment
- grater
- blender
- food processor
Ingredients
- 1 big head broccoli
- 2 tbsp olive oil
- 1 onion finely chopped
- 4-6 cloves garlic minced (optional)
- Kosher salt
- 1-2 tsp lemon juice
- parsley finely chopped (optional)
Instructions
- Wash the broccoli thoroughly
- Remove the stems
- Grate/Shred the broccoli florets or you may use a blender/food processor
- In a heated skillet or pan, saute the onion and the garlic (optional)
- Add the grated/shredded broccoli
- Stir occasionally
- Season with salt and pepper
- Once softened, sprinkle with lemon juice
- Add some finely chopped parsley to garnish (optional)
- Serve hot with any fish or meat dish of your choice
